I love Mexican food! My parents started taking my brother and I to their favorite Mexican restaurant when we were about 5 or 6. Every Friday night after dance class we would go. It was tradition. I would always get a beef burrito with extra sour cream and finish my meal off with flan IF my parents allowed me to get it. They are big proponents of dessert! I shared my love for Mexican food with Judd when we first started dating. He was never a fan until he had my homemade guacamole and chicken tacos. He was sold! Sadly when I discovered I had a lactose intolerance, Mexican food became a thing of the past for me.
Instead of suffering with Mexican food withdrawals. I came up with ways to enjoy it without all the cheese and sour cream. Crazy, I know but desperate times call for disparate measures. I started to substitute guacamole for sour cream as a topper. When I make tacos I use diced avocado inside instead of shredded cheese. These little steps allow me to enjoy Mexican food without getting sick!
Since today is Cinco de Mayo-a holiday that I have always cherished-I thought I would share some of my favorite recipes with you guys perfect for today!
2 Ripe Avocados
1/2 Onion, Diced
1 Roma Tomato, diced
Salt & Pepper to taste
Steps: Cut avocados and place into a food processor. Mix until chunks are smooth. Add diced tomatoes, a little bit of cilantro and a fresh squeeze of lemon and lime. Mix remaining ingredients until you get the consistency you desire. I prefer a smooth and creamy guacamole so my food processor is perfect for mixing it together. Occasionally I will mix ingredients by hand if I desire a more chunky texture. Top with a little salt and pepper.
Chicken tenders, cut in bite-size pieces
1 Package Taco Seasoning
Soft or Hard Shell Tortillas
Roma Tomato, diced
1 Ripe Avocado, diced
Shredded Cheese (optional)
Sour Cream (optional)
Steps: Cut chicken tenders into small bite-size pieces then coat with taco seasoning. Place in skillet and cook thoroughly. Heat tortillas: hard shell tortillas bake in the oven and soft shell tortillas brown in a small skillet. I prefer this method over heating them in the microwave. Place chicken pieces, shredded lettuce, dice tomato and avocado on tortilla and top with cheese and sour cream if you wish.
