Food is a big deal in my home! My husband has a degree in nutrition and appreciates any type of food. I love to make dinners that soothe the soul and make you feel good inside. When I started teaching myself how to cook I discovered how much I loved making comfort foods. I even searched for “Comfort Food Recipes” on Pinterest to start building a list of recipes that I could make.
When I got my Better Home & Gardens Cookbook (15th Edition) I dove right into trying new recipes. One dish in particular quickly became a staple in my home: Better Home & Garden’s Two-Bean Chili. Who doesn’t love chili?! I love this recipe because a.) it’s vegetarian and b.) it’s quick and easy to make. (It only takes 25 minutes to cook!) Here’s what you will need:
- 1 Onion Chopped
- 2 Tsp. Oregano
- 2 Tbs. Olive Oil
- 2 14 oz. Cans Diced Tomatoes (Undrained)
- 1 Can Black or Kidney Beans (Drained & Rinsed)
- 1 Can Red Beans (Drained & Rinsed)
- 1/2 cup Salsa
- 1 Avocado to top Chili with
In a large pot, cook your onion and oregano in the olive oil until soft then add remaining ingredients and bring to boil. Simmer for 25 minutes then serve with avocado topping. Judd likes to top his with cheese sometimes but I opt for the avocado. (Lactose-free problems.)
I love this dish! It is the best chili I have ever made/had. I have thought about making this recipe with a little bit of beef and one can of beans but have yet to try it. Two-bean chili is easy to make and is the perfect comfort food for our family!
