One of my favorite things about fall is the food! Warm dishes with lots of fall colors make for a perfect meal this time of year! I originally wanted to make a few different fall-themed recipes to share but this month is starting to get very busy. So during Labor Day weekend, I came across this Crockpot Chicken & Apples With Sweet Potatoes recipe and decided that was going to be my fall recipe feature!
This recipe was fairly easy to prep. Since it’s a crock pot meal the steps during prep are really the only ones needed to follow. I cubed some boneless chicken breasts as well as 2 sweet potatoes. Let me tell you-sweet potatoes are a PAIN IN THE NECK to cut uncooked! Sweet potatoes were flying around my counter as I tried to cut them up. It was probably very entertaining to watch! I threw in the cubed chicken and sweet potatoes and then got to mixing up the sauce. For the sauce I combined, apple sauce, curry, apple cider and a few other spices. The mixture according to the recipe didn’t make enough to cover all of the chicken and sweet potatoes so I added a little bit of water. I cooked it on low for 5 hours until the chicken was cooked and the sweet potatoes were tender but not too soft.
The finished product was a warm bowl of curry-flavored chicken with sweet potatoes. Judd really enjoyed this dish especially after a long day of work! This recipe got me to break out my crock pot that was collecting a little dust. (I hate admitting that!) It was easy to throw together and made the house smell delicious! I will definitely be making this again!
