Pasta completes me. I swear that I must have some Italian lineage in me. The fact that I am obsessed with any type of pasta is a true testament to that! This Gnocchi with Brown Butter and Sage Pumpkin Sauce recipe by Table for Two came up on my Bloglovin feed one day and I was just dying to try it.
16 oz. gnocchi (She recommends whole wheat, I used regular potato gnocchi.)
4 tbsp unsalted butter
4 sage leaves
3 tbsp pumpkin puree
1.5 cups baby spinach
salt and pepper
Cook gnocchi per package instructions. Place butter in a skillet over medium heat. Immediately start whisking until it starts to foam. (About 2-3 minutes.) Brown bits will show up at the bottom. Take the skillet off the burner so the butter does not burn. Swirl the butter around off the burner until you see a nice brown color. Return the skillet to the burner and add the sage on medium heat. Sage leaves will be cooked until crispy. Once done, remove the sage leaves on a paper towel. Add in the pumpkin puree and spinach over medium heat. Cook until the spinach is wilted.
Toss in your gnocchi and serve with sage garnish.
The Verdict: This recipe was fairly easy to make and made my kitchen smell really good. (I’m all about that!) The flavors really came together nicely. This recipe is quick to make with minimal ingredients making it a weeknight favorite. It is going to be a do-over for sure!
