It’s Meatless Monday! If you aren’t aware of this particular trend let me explain. Meatless Monday is a day of the week where you have meat-free meals. Breakfast, lunch and dinner. Or if you’re like me and can’t quite go without meat for lunch, try a Meatless dinner. In my quest for finding healthy recipes that don’t fall into the Meat category I came across a few pita and wrap recipes. I found this Stuffed Veggie Pita recipe from Renee’s Kitchen Adventures and knew I had to try it. The great thing about experiencing in the kitchen with recipes is you don’t have to follow them. I had a few ingredients missing for this one so I improvised a little bit.
Here’s what you need:
Whole Wheat Pita
English Cucumber, diced
Red or Orange Bell Pepper, diced
Red Onion, diced-I left this out. red onion is pretty powerful raw.
1/2 Cup Mayo
Red Wine Vinegar (or) Apple Vinegar-I had to get creative so I substituted the red wine vinegar for Apple Cider Vinegar. Just a little!1 Clove Garlic
Salt & Pepper
Combine dressing ingredients in bowl. Dice vegetables and throw in with dressing and mix until veggies are coated. Then fill your pita with the desired amount of mixture and enjoy! This is quickly becoming a go-to dinner on weeknights. It’s easy to throw together quickly and tastes absolutely delicious. Plus it’s a unique way to get your dose of veggies because we all know how important they are on the food pyramid.
