On busy work nights or nights when we don’t feel like cooking having some ingredients to throw a quick salad together is essential. Judd recently suggested we start doing salads at least once a week. Since I get pretty bored with my food coming up with a salad I wouldn’t grow tired of needed to research. I headed to Pinterest and started to jot down ingredients. I went through each suggestion and Judd helped us come up with a simple Apple & Pear Spring Salad that was perfect AND delicious!
- Spring Mix Lettuce
- 1 Granny Smith Apple
- 1 Bartlett Pear
- Feta cheese crumbles
- Dried Cranberries
- Sliced Almonds
- Raspberry Vinaigrette
- Combine balsamic vinegar and olive oil
Simply toss together these ingredients and top with your favorite salad dressing. It’s as simple as that! I love this salad because it combines together some great flavors. I always make a sacrifice for this salad to enjoy all of the feta cheese. SO MUCH FETA CHEESE! This salad would also be good with Gorgonzola cheese on top. I prefer to top my salad with the balsamic vinegar and olive oil mixture. I just love the bitterness with the sweet cranberries and apples! A raspberry vinaigrette would also be a good dressing option.
The great thing about salads is you can throw whatever you would like together. This recipe can easily be made with baby spinach leaves or arugula. Get creative with your salads! I’ve stopped looking up salad recipes because I find it easier to just gather my favorite fruits and veggies to throw together on my own. Or let Judd help come up with a salad. He always has great suggestions! No one is going to judge your salad combinations. They may even ask for your recipe!
