I am always on the hunt for dairy-free recipe and when I came across this Avocado Quesadilla recipe from by The Garden Grazer, I was just dying to try it! Now I will warn you, this quesadilla doesn’t have ANY cheese in it. It’s a vegan recipe which is great for me but maybe not for the cheese lover. This recipe was quick and easy to throw together and tasted oh so yummy. Here’s what you’ll need:
- 1 Avocado, smashed. I used 2 avocados and put it in my food processor.
- 1 Roma Tomato, diced.
- 1 Green Onion, chopped.
- Tortillas or Wraps. I used spinach wraps because we are trying to be healthier.
- Spice of your choice: cumin, garlic powder or chili powder. I left these off for the first time trying this recipe.
Smash up your avocado by hand or in a food processor. Dice the tomato and chop up the green onions. Grab a tortilla or wrap and fold in half first. Spread avocado on one side then add your tomatoes, green onions and spices if you chose. Toast each side in a skillet then enjoy!
This recipe was perfect for a quick and easy dinner. Judd worked late the night that I tried it so I only made a few for myself. This is a great recipe for someone who craves quesadillas but can’t eat the cheese…so basically me! The avocado was nice and creamy which made up for the lack of cheese in the wrap/tortilla.
