In my quest to broaden my recipe index, I came across this Butter Chicken Pie recipe by A Burst of Life. I was so excited to try it but was nervous that Judd wouldn’t enjoy it much. You see he’s not one for Indian food. However he has always been a good sport in trying new foods that I make and usually he always enjoys it in the end. (i.e. My homemade guacamole, Mexican dishes, etc.) So I told him to keep an open mind Sunday night when I started to make this Butter Chicken Pie recipe and told him if he didn’t enjoy it, I would never make it again. Guess what? He loved it! And bonus points because I loved it to!
I came across this recipe on one of the blog forums. Anything with butter in the name automatically catches my eye and makes my tummy rumble! I gathered my ingredients and set forth to make this delicious twist on an Indian favorite.
Chicken Breasts, cut into bite-size pieces
1 Packet Butter Chicken Mix
1 Can Coconut Milk
2 Tablespoons of Peanut Butter
4 Tablespoons Butter
Pinch of Cinnamon
1 Chopped Onion
Clove of garlic, peeled and chopped
A little ginger, peeled and chopped
1 Can Whole Peeled Tomatoes-This wasn’t enough in my opinion. Next time I plan on using 2 cans!
1 Roll Puffy Pastry
Chop up your onion, garlic and ginger and saute in butter until it’s lightly browned. Mix in chicken as well as the Butter Chicken mix. Pour in coconut milk, peeled tomatoes, cinnamon, salt and pepper. Mix in some peanut butter and make sure all ingredients are mixed together thoroughly. Pour mixture into baking dish and top with puff pastry. Lightly brush puff pastry with egg wash and bake for 15-18 minutes.
The end result is a flavorful, chicken soup with hints of spice that don’t completely over power the meal. We went back for seconds and even thirds enjoying the unique taste of Butter Chicken pie as newbies. I will definitely be making this dish again and again. Maybe next time even throw in my own bit of flair to it. Maybe crushed tomatoes instead of peeled. One thing is for sure, this recipe doesn’t need any extra spices! Everything mixed in together so well making this dish flavorful and delicious. Home run, A Burst of Life! Seriously!
