Salads are always disappointing to me. If I have one for dinner I am usually pretty hungry an hour later. When I look for salad recipes for dinner I try to stick to filling salads. These salads have many ingredients, proteins and a yummy dressing to top it off. When I came across this Harvest Cobb Salad by Damn Delicious I knew I had to give it a try. But to my dismay I failed pretty hard while making it! It’s not hard to boil an egg but for some reason my eggs didn’t boil correctly leaving my yolks runny…totally NOT hard-boiled! Here’s what you’ll need:
Bacon (Optional for me, I didn’t make any!)
Hard Boiled Eggs
Crumbled Goat Cheese
Poppy seed Dressing (In the link, I bought a pre-made dressing.
Hard boil your eggs. Don’t do what I did and under cook them! Chop up your lettuce, pear and apple and toss into a salad bowl. Top with pecans, dried cranberries, egg and goat cheese. Pour a little dressing on top and serve immediately.
This was not my favorite salad I’ve made. Considering the minor set backs, failed hard-boiled eggs and no bacon, I don’t want to throw it out yet. I really enjoyed the flavors in this salad! The combination of the fruits with the salty pecans was lovely. The poppy-seed dressing is the perfect for this salad. This is the first salad that I’ve used crumbled goat cheese on. It was different from I expected but tasty none the less. Next time my plan is to focus a little more on hard boiling the eggs better(I was in a rush to make this dinner.) and potentially replace the bacon with chicken. This salad is great for a busy weeknight as a main dish or a side salad for a fall dinner. I plan on making this one again!
