When I looked at the calendar and noticed that our anniversary fell on a Tuesday this year my heart sunk. We would both be working which meant getting off in time to get ready for a nice dinner wouldn’t work. Instead of dwelling on it I decided to cook and nice and easy dinner that I could dress up with fancy China and our wedding champagne flutes. When I saw this Lazy Lemon Pasta by one of my favorite bloggers, The Londoner, I knew I just had to try it!
This recipe is super easy to make and doesn’t take much time to prepare/cook. Judd rolled up his sleeves and helped me make our dinner which was nice. Let’s get to the ingredients and steps!
Thing Spaghetti (She recommends using a handful.)
1 Lemon, sliced
Handful Fresh Basil
Cream Cheese (I used plain but she recommends using a black pepper cream cheese.)
Salt & Pepper
Slice your lemon and gather a handful of lemon. I love the way my hands smell after slicing lemons and handling basil!
Throw all the ingredients in one pot and cook until the pasta is tender and the sauce is creamy. Serve immediately and garnish with some basil.
Judd popped open some bubbly to help celebrate our 2nd wedding anniversary.
I set our table with my China and our wedding champagne flutes. I love these! My mother in law got them for us for my shower. They are monogramed with our initials.

The Verdict? This recipe was absolutely delicious! It is easy and quick to prepare perfect for weeknight dinners. There are minimal ingredients that don’t cost an arm and a leg. The dish was a little heavy but overall delicious! I will be making this one again!
