I have always been very picky when it comes to Meatloaf recipes. My mom always makes Ina Garten’s Meatloaf recipe which is one of my favorites. I had high standards when it came time to finding my own recipe for a killer Meatloaf and when I came across this Meatloaf Muffin recipe I knew it was perfect! The first few times I made it, I did not have a food processor so I had to cut up the onion and green pepper by hand. This time around I used my food processor to cut up the onion and green pepper which made it a little watery. When I combined all of my ingredients, the meat seemed a little watery from the vegetables. Next time, I won’t cut the onion and pepper as much or drain the water out before combining them in with the meat.
I love this recipe because it is simple and easy to follow. Simply just combine all the ingredients and roll the meat into small balls placing them into the muffin tin. It takes about 20-25 minutes to cook and the end result is delicious.
Recipe Review: I’ve been making this meatloaf muffin recipe for about 3 years now and I will continue to make it! I love how simple the recipe is and how quickly dinner is ready when I make it. This recipe will be perfect when I have kids in the future. (Not just yet!)
