In our quest for healthy eating, I opted to make a new salad the other night. I searched the Pinterest boards to find the perfect salad with enough ingredients to make up the main course. I decided to try this Southwestern Chopped Salad with Cilantro-Lime dressing thanks to The Garden Grazer. Salads can be too plain in my opinion so when I found this salad I was dying to try it out! The ingredients add a lot of color to the ever-so-mundane lettuce pile salads usually consist of. I used the following ingredients per the recipe:
- Romaine Lettuce
- Black beans
- Green Onion
- Orange Pepper
- Cherry tomatoes.
- Avocado slices. (Optional since the dressing is made with avocados.)
My favorite part of this salad was the Cilantro-Lime Dressing which is vegan. (Made with avocados instead of Greek yogurt which was a big win for me and my lactose intolerance!) It’s very rare that I find salad dressing recipes that are vegan and taste delicious. The dressing was easy to make and added a nice flavor to the salad.
This Southwestern Chopped Salad was a perfect portion. Sometimes when I have a salad I am hungry within ten minutes of eating it but this salad was the perfect level of “filling.” Each ingredient brought the whole salad together as more of a meal and not just a side salad.
Recipe Review: This salad was perfect for dinner on a weeknight after work. It was quick and easy to make. Next time I may add some chicken to it but the black beans really make up for the lack of meat. I see it becoming a new favorite in our house!
