One of the things I love about blogs is that I can get specific in the ones I follow. For instance, Minimalist Baker is a blogger I follow via Bloglovin. She posts some great recipes but this one recently caught my eye and I have been dying to try a vegan roasted red pepper pasta. Like most non-vegans, I was skeptical to try it. Vegan foods have a tendency to be bland if not flavored correctly. I was also pretty nervous to feed this dish to my husband…a non-vegan and a skeptic.
In my quest to make not only healthy dinners but also make them dairy-free I usually just omit any dairy ingredients. That’s not always fun! Leaving out the best ingredients can take a lot away from a dish. When I found this recipe, the photos showed that the pasta looked both creamy and appetizing despite the addition of nutritional yeast. I’ve been wanting to try to cook with nutritional yeast for a while now and I figure this recipe would be a great place to start!
Roasted Red Peppers-she recommends roasting your own and I got lazy so I bought them jarred.
4 cloves of garlic
Unsweetened Original Almond Breeze Almond Milk
Linguini or Thin Spaghetti
Red Pepper Flakes-optional
If you buy roasted red peppers, start by adding finely chopped garlic and shallots to a skillet and saute them in 2-3 tablespoons of olive oil until they are cooked or browned. Boil and cook pasta according to directions on the box. Add red peppers, cornstarch, almond milk and nutritional yeast to food processor. Once shallots and garlic are sautéed, add to food processor. Add a pinch of salt and pepper and blend until texture is fairly smooth. Once mixture is blended, add sauce to pan and simmer on ow. Once pasta is done, drain and add a little bit of olive oil. Mix in red pepper sauce and serve.
We were both pleasantly surprised with how delicious this recipe turned out. The flavor, the creamy-ness and the overall presentation of this dish really won us over. I cannot wait to experiment more with using nutritional yeast to cook dairy-free recipes with. Judd also requested I make this recipe again…which I am 110% sure that I will do!
