Weeknight dinners can be a challenge if you work full-time and have after work activities like going to the gym. I am always on the quest for simple, minimal-ingredient weeknight meals that are both healthy and delicious. I came across this Southwest Hummus Wrap by Chef In Training and pinned it to Pinterest. Usually when I am researching meal ideas I pin the ones I like first then go back and reference when I make my grocery list. Judd actually picked this one out for us this week so I decided to give it a try!
I love a good wrap! This recipe is full of yummy ingredients and can be customized if you want to add or leave things out. Here’s what you need:
- Tortilla wraps- I used sundried tomato ones.
- 1 Can Black Beans, drained & rinsed
- 1 Can Corn, drained
- Diced Tomatoes
- Shredded Lettuce
- Avocado Slices
- Salsa (optional)
Spread hummus on the center of the wrap. Heat up the black beans and corn in a skillet. Place black beans and corn in wrap. Top with tomatoes, shredded lettuce and avocado slices. Fold two sides of the wrap towards the middle then roll the tortilla from the bottom to conceal ingredients.
I love this recipe because it’s perfect for nights when I have yoga or we get off work later than usual. It took about 10-15 minutes to prep and we had leftover ingredients for the following evening. I actually made two wraps that night for dinner! It was hard to resist seconds!
