My maiden name is Baker and I have always tried to live up to it! Which is why I decided to make Judd a special pumpkin flavored treat for his birthday. I’ve always wanted to make homemade cupcakes with homemade frosting. I came across this Pumpkin Cupcakes by Just a Pinch blog and knew I had to try them. I was a little nervous to make my own frosting but what better time to start then for Judd’s birthday.
Pumpkin Pie Spices
For Cake: Preheat your oven to 350 degrees. Grab a muffin tin and place your cupcake liners in. Combine the eggs, sugar and oil until well blended. Add in baking soda, powder, pumpkin pie spice, cinnamon, salt and pumpkin. Mix until smooth. Slowly add in the flour.
Dispense batter into cupcake liners. Recipe should make 24 cupcakes.
Bake in the oven for 25-30 minutes. Let cool before icing.
For Frosting: Combine confection sugar, vanilla extra, butter and cream cheese in a mixer until smooth.
The Verdict? These cupcakes were a hit with Judd! (And it helps that I enjoyed them too!) They were pretty simple to make. They took no time at all to bake. My only fail at this was the frosting. I felt that I didn’t mix it well enough. But that didn’t seem to matter because they tasted delicious!
