In our quest for healthier snacking, I decided to try a new recipe this week. Instead of buying granola bars I decided to try Trisha Yearwood’s Power Balls. Trisha Yearwood is one of my cooking idols. I have her cookbook, Trisha’s Table, and I love making things from it! If you get that mid-day slump, make some of these power balls.
Raw Honey (I use locally made honey.)
Roasted Sunflower Seeds
Crunchy Peanut Butter
Mini Chocolate Chips
Place all of your ingredients in a food processor.
Pulse mixture until it is combined.
Wrap mixture into plastic wrap and chill in the fridge for about 30 minutes. Remove mixture from fridge and roll into 1.5 inch balls.
Place on wax paper on a baking sheet and chill in the fridge for an hour. Store in an air-tight container.
These power balls were super easy to make! I was impressed by the taste of them once they finished cooling in the fridge. These are perfect to pack up and take with you to work to snack on. I also felt that these would make a great replacement for the granola bars I am always eating for breakfast in the morning.
