One of my goals this quarter is to eat a substantial breakfast each morning. Let me tell you…it can be difficult! I tend to snooze my alarm on weekdays which leaves a very short amount of time to eat anything. But instead of using my excuses I am making it a goal to eat a good breakfast each day. Here are 5 easy breakfast ideas and recipes that you can try to kick-start your mornings.
Coconut Milk Yogurt With Granola
I used to hate the texture of yogurt. But being dairy free does have its perks and coconut milk yogurt is one of them! I like to top mine with granola. You can also garnish it with fresh fruit or chocolate chips.
- 1 container non-dairy yogurt (I like So Delicious Coconut Yogurt)
- 2 tbsp granola
Peanut Butter Toast With Bananas
One of my favorite go-tos! I enjoy making this toast during the work week because it is quick to make and super delicious. The best part is toasting the bread then covering it with peanut butter. The warm toast always makes the peanut butter extra smooth. Pile on the bananas, the more the merrier!
- 1-2 slices wheat bread
- a smear of peanut butter (I like both crunchy AND creamy!)
- 3-4 slices of banana
- 3-4 slices of strawberries (if you want a little more!)
What’s a breakfast list without this?! Not valid! Like many, I am hooked on avocado toast. I prefer mine topped with a fried egg or tomato. You can do a lot with this one! At home, I usually just do avocado toast plain. But if you ever find yourself in Charleston, SC stop by The Daily and try their avocado toast. It’s life-changing!
- 1-2 slices sourdough bread
- 2 ripe avocados, smashed (I use a food processor to blend it up nicely)
- 1-2 fried eggs *optional
- 1-2 slices of tomato *optional
Cream Cheese Toast With Cucumbers
Cream cheese always had a place in my heart. Now that I am dairy-free I use Toufutti cream cheese and it taste pretty much the same! I’ll use 5-grain brain and slather on some vegan cream cheese then top it with fresh cucumber slices. This breakfast is my favorite for the summer when it’s hot out.
- 1-2 slices of wheat bread
- a smear vegan cream cheese (I use toufutti but Kite Hill is another great alternative)
- 4-5 slices of cucumber
Chocolate Peanut Butter Banana Protein Smoothie
For my birthday this year Judd got me a Vitamix. I’ve wanted one for a while so you better believe I dove right in making smoothies for breakfast! I really enjoy protein smoothies either for breakfast or as a pre-yoga snack. Since I try to stay dairy-free I use Sun Warrior’s Plant Based Chocolate Protein.
- 1 tbsp Peanut Butter
- 1 cup non dairy milk (I use soy)
- 1 Scoop Sun Warrior Chocolate Protein
- 1 Banana
All of these items are easy to make and provide you with the energy to get through at least until lunch.
