Like every good human I love pizza. It was one of my favorite foods growing up and until my lactose issues I would eat it at least once a week. Now that I have to watch my dairy intake I’ve had to improvise on pizza recipes. I was gifted with Trisha Yearwood’s cookbook Trisha’s Table where she shares a Basil Pesto Pizza. I was so excited to try it!
This pizza takes time to make but I use a shortcut and buy pre-made pizza dough. Publix sells a pre-made and flattened dough making this an easier recipe to make. You will need time and help in the kitchen making this but it’s fun to make! My husband loves to cook so having his help on this way is more fun than anything else!
Grated Parmesean Cheese
Lemon Juice (from freshly squeezed lemon)
Garlic Cloves, smashed
Pizza Crust(I get the pre made kind!)
Preheat oven to 425 degrees. Add olive oil to a saucepan and bring heat to medium. Add onions and caramelize until brown. While the onions are cooking, add walnuts and olive oil to a food processor. Mix until smooth than add in smashed garlic, lemon juice, cheese and sea salt. Add in basil leaves and spinach and combine until smooth. (I skip the Kalamata Olive spread because Judd and I both dislike olives…)
Assemble pizza by spreading basil pesto mixture, onions and tomatoes on crust. Bake for 10 minutes or more dependent upon your crust. Serve with fresh basil on top.
We’ve made this recipe twice already in the last month! I love how much fun it is to make. Judd and I get in the kitchen and team up making this dinner. We have fun with it. I’d like to cut back on the oil in the pesto because it makes the pizza a little too oily.
