I am a sucker for pasta! I make it at least once a week because I just can’t get enough of it. Instead of making simple pasta with tomato sauce I was on the hunt for something a little different. Thanks to Pinterest I came across this Spaghetti with Roasted Tomatoes, Fresh Basil and Toasted Garlic Breadcrumbs courtesy of A Beautiful Plate. This recipe is a lot of work but oh so worth it!
7 Cloves of Garlic, 6 smashed, 1 minced.
Parmesan Cheese (Optional if you’re lactose like me!)
Start by preheating your oven to 450 degrees. Place cherry tomatoes on baking sheet with smashed garlic and drizzle with olive oil, sea salt and pepper. Bake for 20 to 25 minutes and flip every 5-10 minutes. While the tomatoes bake, boil water in a pot and heat up a skillet with olive oil. Add chopped shallots and saute for about 1-2 minutes. Add in breadcrumbs and minced garlic and cook for about 2-3 minutes. Set aside. Add thin spaghetti and cook thoroughly. In the last-minute of cooking pasta, add in basil leaves. Drain pasta but set aside 1/2 cup of water if needed. Drizzle a little bit of olive oil Add in roasted tomatoes and garlic. Garnish with breadcrumb mixture and top with basil.
This recipe will make your entire house smell like garlic…but who doesn’t love that?! It’s the perfect recipe for a weekend dinner when you have time to prep everything.
Cooking Tip: Having trouble mincing garlic? Lay a garlic glove down on a cutting board and use your knife blade to smash the garlic by pressing down on the blade. This makes it much easier to mince garlic!
