Gnocchi is slowly becoming one of my favorite things to make! When a recent Pinterest search for non-meat meals came up with this One Pan Gnocchi with Sundired Tomatoes and White Beans I knew it was a must make. Thanks to Sweet Peas and Saffron for this quick and easy recipe. Let’s get to cooking!
1 Package Gnocchi
1-2 tbps. Olive Oil
Salt & Pepper
A dash of Red Pepper Flakes
2 Cups Mushrooms *I left these out
1/3 Cup Sundried Tomatoes
4 Cups Loosely-Packed Spinach
19 oz White Beans, rinsed
Parmesan Cheese *I left these out as well. #dairysensitivity
Heat up oil in a pan over medium heat. Add in your Gnocchi and sprinkle in your salt, pepper and red pepper flakes. Pan fry for about 10-12 minutes, stirring occasionally. Gnocchi will appear golden and crispy. This part of the recipe calls for cooking up the mushrooms. But I skipped the mushrooms!
Add in your sundried tomatoes, spinach and white beans. Stir until your spinach is wilted. Add in more salt, pepper and red pepper flakes if you desire.
This vegetarian dish was a huge hit in our house! First off, it was extremely easy to make. One-pan meals are very easy to make especially on a weeknight. Secondly, the ingredients were minimal and affordable. I like to keep a large bottle of olive oil in the house at all times since I use it with everything I make. Now I’m not one for spice but the red pepper flakes really added to the flavor of this dish!
