Last week we decided to go meatless for dinner items. This is something we had never done and is completely unheard of in our home so it was a bit of an adjustment. I sat down and planned meals for each night based off of our restrictions: no dairy and no meat. The meals I found were heavy in vegetables and black beans. We forged ahead with a week of meals successfully:
Monday: Burrito Bowls I’ve made these bowls before but I found a different recipe to try out this time. Cook up some brown rice then stir in about a cup of salsa once it’s done. Drain a can of corn and black beans (rinse) then combine with rice. Add some romaine lettuce and cheese if you prefer and top with chopped avocado. Instead of cheese I decided to make a creamy avocado dressing to pour into our burrito bowls.
Tuesday: Black Bean & Sweet Potato Toastadas This recipe was a MUST try in my book simply because of the roasted sweet potatoes. Judd took the reigns on making this one since it was his day off and he killed it! He cubed up 2 sweet potatoes and placed them on a baking sheet. He poured a little olive oil and sea salt then roasted them in the oven. For the Tostadas, we used whole wheat tortillas. We placed some black beans, avocado slices, cilantro and roasted sweet potatoes on the tortillas then baked them in the oven for about 10 minutes. It resulted in a delicious combination of southwestern meets healthy options. I highly recommend!
Thursday: Rainbow Roasted Vegetables & Brown Rice By far the most colorful dish I have made to date! Chop up the following veggies: Red pepper, carrots, yellow pepper, zucchini, broccoli florets and red onion and place on a baking sheet. Instead of oil use balsamic vinaigrette and pour a light amount over chopped veggies. Add dried oregano and bake int he oven for about 25 minutes. Cook brown rice as instructed then mix in roasted veggies.
Overall our meat-free dinner week went really well. We ate a lot of black beans and rice. We kept our portion sizes average which resulted in Judd being hungry shortly after dinner-that always happens! I would consider doing a Meatless Monday but I don’t think I could personally take a week off from meat. I need all the iron I can get!
