Christmas treated me to a new kitchen device that I’ve always wanted. Pasta is going to have a new flair thanks to my new spiralizer! That’s right. No more carb-loaded pasta dishes. Veggies take center stage in our pasta dishes now and I cannot wait to share this new recipe with you guys!
My first recipe I wanted to try with this spiralizer was Zoodles with Avocado Sauce courtesy of Simple Vegan Blog. Zoodles are spiralized zucchini pieces that look a lot like thin spaghetti. But the best part is it’s a great new way to incorporate vegetables into meals. This recipe is vegan friendly which means no diary involved in the sauce portion.
1/3 cup Water
2 tbsp lemon juice
4 tbsp pine nuts
1 ¼ cup basil
12 cherry tomatoes
Make zucchini noodles with a spiralizer. This part was a lot easier than I expected! With my 4-Blade Paderno Spiralizer making my zoodles was a piece of cake! I highly recommend this one if you want to purchase one. Just look at these amazing zoodles!
Blend the rest of the ingredients except cherry tomatoes in a blender until smooth. In a large bowl combine noodles, avocado sauce and cherry tomatoes.
The Verdict: This recipe was a home run in my house! For starters it took maybe 5-10 minutes to throw together. The ingredients are minimal and fairly cheap. The one thing I had to battle was an unripe avocado. Instead of adding water to the food processor I used olive oil to help smooth my sad little avocado and it worked! This recipe calls for the zoodles to be raw which I was skeptical of at first. But once I threw the ingredients together the raw zoodles were perfect! I will be making this one again!
